EATS: Grain Free Pancakes

 

I think I’m addicted.

I have these pancakes almost every morning after my hour walks. These protein packed, grain free pancakes with nutritious ingredients will keep me full for hours. You won’t be missing your childhood IHOP pancakes after having these.

 

Ingredients:

 
  • 1 ripe banana (mashed)

  • 1 ½ tablespoon of Birch Benders Paleo pancake mix

  • 1 tablespoon Vital Proteins unflavored collagen powder

  • 1 tablespoon Flaxseed meal (amazing for digestion)

  • 1 egg with or without yolk. (if yolk added, add another tablespoon of the Paleo pancake mix)

  • 1 handful of blueberries

  • dash of sea salt

  • 1-2 teaspoon Coconut oil

  1. Mix all ingredients (except coconut oil) together

  2. Turn on stove at low heat to ensure pancakes cook all the way through

  3. Add the coconut oil to your pan

  4. Use a spoon to form the circular pancakes on the pan

  5. Once one side of the pancake turns golden and the uncooked part isn’t runny, flip it over.

  6. Wait until golden and repeat.

    This recipe should make at least 2 medium sized pancakes. Add some fruit, honey and peanut butter. Pairs amazing with coffee and nice morning view.
